It takes on average 20 litres of water to produce 4 litres of wine. And around 25% of all winery wastewater produced is discharged in a short period of time (vintage). Typically, wastewater is discharged to a treatment pond or lagoon, where either an anaerobic treatment process is undertaken, or the lagoon can aerated. Irrigation of winery waste effluent is common.
